Tandoori
Tandoori dishes derive their name from the charcoal fueled traditional clay Tandoor oven that they are cooked in. The heat generated in the Tandoor oven gives Tandoori dishes their unique taste; meats are lowered into the oven on skewers and bread is cooked on the sides of the oven with the aid of a good slap and asbestos fingers. Most meats can be ‘Tandoori-ed’ but the secret to success in Tandoor dishes is the marinade (yogurt & spices).
Tikka
Tikka is prepared in a similar way to Tandoori dishes but uses fillets of meat, chicken or fish cooked on skewers rather than larger portions of meat, chicken or fish.
Tikka Masala
Tikka Masala is achieved in 2 stages of cooking; marinated meat is cooked on skewers in a Tandoor oven before it is added to a Masala curry sauce to produce a creamy, mild and colorful dish with a distinct day-glow red due to the addition of red tomatoes and served with yogurt or single cream.
Biryani
Biryani is a rice dish cooked with your chosen meat(s) or vegetable(s).
Bhuna
Bhuna is a fairly dry-fried curry sauce containing onions, cashew nuts and Indian spices.
Korma
Korma is typically prepared with butter and thickened with single cream and coconut milk to give an extremely mild creamy sauce with subtle spicing (cardamom, clove and cinnamon).
Rogan Josh
Rogan Josh is cooked with tomatoes, onions and capsicums.
Madras
Originated and named from the city of Madras in the south of India. Madras sauce is a fairly hot curry sauce and with heavy use of chillies.
Sheekh Kebab
Sheekh Kebabs consists of minced lamb mixed with lemon juice, coriander, onion, garlic and green chillies, the meat is shaped onto a skewer, like a sausage, and cooked in the Tandoor Oven.
Dhansak
Dhansak is described as a sweet and sour curry with a lentil sauce.
Jalfrezi
Jalfrezi is a ‘hot’ dish given additional heat by being cooked with fresh green chillies. It usually also contains visible onion, tomato and capsicum. It is the addition of the green chillies and probably addition of extra chilli powder that sets this dish apart from other typical curries on the menu. It is generally served as hot as a Madras or Vindaloo.
Vindaloo
Vindaloo is really indicative of the strength or heat of the curry. It usually has diced potatoes in the sauce along with the chosen meat or chicken.
Naan Bread
Naan is a teardrop-shaped bread that is baked in a tandoor (traditional Indian clay oven).
